| Dextrins are obtained by thermal starch hydrolysis. They display low viscosities and are considered as GRAS. Maltodextrins are obtained by partial acid or enzymatic hydrolysis of starch, and are defined as carbohydrate polymers with dextrose equivalent (DE) values below 20. DE values are correlated to DP values according to: DE = 100/DP. Note that DE values of commercial dextrins and maltodextrins are nominal and the corresponding DP or Mw values may significantly vary from those determined by gel permeation chromatography or other methods.
