Konjacs

.Konjac b-1,4-Glucomannan, is derived from the roots of Elephant yam (Amorphophallus konjac) high molecular weight (200,000-2,000,000 daltons) nonionic copolymer of mannose and glucose (Man:Glc ~1.6) with some single residue 3-linked D-mannose branches and 6-O-acetyl residues (DS 0.02-0.05). Pseudoplastic viscosifier, forms thermally-induced gels with base; absorbs 100 g water per gram. Clinical trial results with konjac show weight loss and cholesterol and LDL reductions in obese human subjects.
