| Guarans (guar gums) isolated from endosperms of Cyamopsis tetragonolobus are b-1,4-D-galactomannans with a-1,6-linked D-galactose residues attached to a mannan backbone, on average on every second main chain unit. Guar is a high molecular weight (up to 1,200,000 daltons), water soluble dietary fiber advocated for use in reducing serum cholesterol levels. Guaran displays viscosity synergism in the presence of xanthan. Guarans are available in different viscosity grades. |
