| Carrageenans are a red-algae-derived (Rhodophyceae) family of linear galactans with a sulfate ester of 15-40% and alternating (1®3)-a-D- and (1®4)-b-D-glycosidic linkages. They are extracted from red seaweeds of the Furcellariaceae, Gigartinaceacea, Phyllophorraceae, and Solieriaceae families. The three major carrageenans are k-, i-, and l-, and the four minor fractions are m-, u-, q-, and x-carrageenan. The gelling k- and i-carrageenan feature 3,6-anhydro-D-galactopyranose units in the repeat unit that allows for a helical conformation. Structural variations may occur based on differences in algal source that give rise to hybrid structures. We offer a range of different galactans, including k-, l- and i-carrageenan.
